1/2 cup Panko Japenese Bread crumbs (I found it at Von's in the Asian aisle) 20g
2 zucchini's, free
1/4 cup of parmesan cheese, free
1 egg, free
1/2 cup minced onion (I substituted minced garlic), free
1/8 teasponn each salt (I used Mrs. Dash) and pepper
Grate the zucchini and thoroughly mix all the ingredients all together.
In a frying pan, spray cooking spray and drop in mounds of the mixture, then with spoon form into pancake or patty shape.
Cook on each side 2-4 minutes.
It makes about 6 pancakes, 3.3 grams of carbs each.
They are very tasty, and fairly easy to make. They also reheat decently, or are okay cold.
